SPT- Comfort Food

Today is cold, rainy and windy- the perfect day for cooking up something warm and comforting. But- with my pink eye, I am avoiding as much cooking as possible for a couple more days. So, todays SPT includes pictures from the last few weeks.

As our weather has cooled, I have definitely felt the pull to be near my oven, to hold a warm mug of soup, to breathe in cinnamon and cloves... Oh, how I LOVE fall!! We have thoroughly enjoyed our cold days with some zucchini bread, pumpkin cookies, banana muffins, sugar cookies, chili, peanut butter cookies, potato soup, caramel corn... I suppose these could be enjoyed any time of the year, but for some reason, fall makes them taste best! Here are a few of our "fall" favorites:

Honey Drop Cookies
1 1/2 c. butter (softened)
2 c. sugar
1/2 c. honey
2 eggs
4 c. flour
1 Tbsp. cinnamon
1 tsp. ginger
1 tsp. cloves
1/2 tsp. salt
3 tsp. baking soda
1 tsp. baking powder

Cream the butter and sugar. Add honey and eggs, beat until smooth. Mix dry ingredients together, then add slowly to wet mixture. Shape dough into balls. Roll in sugar (additional to 2 cups in dough). Place 2" apart on a greased cookie sheet. Bake at 350 degrees for 7-10 minutes. Let stand for 2-3 minutes on cookie sheet before moving to wire rack to cool completely.

Potato Chowder
3 cups milk (can use fat free)
1 can (10 3/4 oz.) condensed cream of potato soup
2 c. southern style hash browns
1 c. sharp cheddar cheese, grated
4-6 slices of bacon (cooked, drained and crumbled)
1/4 c. green onion

Mix milk and soup in a large saucepan. Stir in hash browns. Bring to a boil on high heat then simmer for 10 minutes at medium-low heat. Stir frequently to avoid burning. Turn off heat. Add bacon and green onion. Let sit for 3-5 minutes. Ladle into bowls or mugs and top with grated cheese. Serve with a roll for dipping or works great in bread bowl!

Fall Fruit for Bagels (my own concoction!)
1 apple and 1 pear (I like to mix colors. So, if I have a Bartlett pear which is yellow, I use a Granny Smith apple which is green. Or if I have an Anjou pear which is tart and green, I use a Gala or Fuji apple which is sweet and red.)
1/2 c. softened cream cheese
cinnamon, to taste
nutmeg, if desired

Remove the stem and seeds from the fruit. Chop it up nice and small. Mix fruit in a bowl with cream cheese and cinnamon. Spoon onto a toasted bagel. Add a dash of nutmeg if desired. If you have any left over, it will keep in the fridge for 2-3 days.

Sometimes I wonder if we grew up in the same house. How is it that I have never tasted or heard of any of those recipes?!? Thanks for sharing. Micah and I are excited to try the potato chowder for dinner tomorrow night. I hope you get to feeling better soon. LOVE YOU!

P.S. Did you or didn't you take family pictures this week? I am dying to know how they turned out.

Hey, we are having that exact potato soup for dinner. I got it out of the Kraft magazine. I am glad to hear your recommendation... it couldn't be easier so I am hoping it is also really good!

I love potato soup. It makes Marc sick, though, since he has a little lactose intolerance. Dang! Maybe I will make it when he is in NY!

Your fruit/bagel concoction looks really good to me. I never would have thought of that. I so love it when the weather turns colder and I want to cook and bake more (because it's not too hot to turn on the oven). I love soups and stews. It's all good!

I just lvoe that....maybe you can coerse jill to send me some of her tasty tasty she does...hey those cookies with the blue y are awesome...I can't believe you are such a baker...what a sight...sooo pleasing...Good to have you posting again. and that potatoe soup! GOsh nothing to munch on...have tons of cheese but no chips for nachos or tortillas for quesadillas...what to do?

I feel like whenever I see food on a blog it looks like the best thing ever. Apparently I need to cook more.

I think you should post your fondue recipes, especially your caramel recipe.
